Elderberry plants are native to North America. They have beautiful white flower clusters and large bunches of small, dark berries. Elderberry fruit is well-known for its immune-boosting properties. Other advantages of the berries include their anti-carcinogenic and anti-oxidant properties, as well as being very high in vitamin C. Elderberries are used to make wine, juice, and jelly, but cannot be eaten raw. Little known fact: Elderberry blossom clusters are even used as a vegetable, coated in batter and cooked as fritters. Because of its late bloom in June, elderberry plants have very consistent fruit production. People find elderberry plants to be low-maintenance as they're not affected by insects or diseases. They're quick to grow to a mature height of 6-8 ft.

Taste & Plant Attributes

But how do they taste? Elderberries have a pleasantly tart taste and can be used in wine, juice, jams, pies, and jellies. You can even use the flowers to make tea, fritters, and pancakes. Though some may want to eat elderberries fresh, we don't recommend that. Elderberries are mildly toxic until cooked.

 

Generally speaking, elderberry plants can tolerate different soil conditions, except for drought conditions. They’re also pest resistant and grow quickly to approximately six to 12 feet high. Berries typically ripen in early August to late September.
